Gouache is expensive, difficult to mix and paint with the correct consistency. It provides excellent control, and was used for professional design work before computers. If it's too wet, then it will crack when it dries. If it's too dry, then it will not paint on smoothly, so you have to find the balance.
Watercolor is cheaper, easier to mix, but lacks the control that gouache provides. You need watercolor paper, not regular paper, and you need a workspace that you can affix the paper to, so that while it dries it doesn't warp the paper. Watercolor is often used for artistic, organic imagery with colors that mix together, like sunsets, landscapes, etc.
Hope that helps!

The top quality water-based paints. Made with natural binders. Opaque, usually matte, and above all distinguished by a strong covering power, the paint film remains very flexible, does not crack and can be easily reworked with water when dry.
