Airbrush Cleaning
Can you spray thinned chocolate from an airbrush?
For fine details in chocolate moulds (high quality chocolate) I know you can thin chocolate with extra cocoa butter and spray with a large spay painting tool..... but I was wondering if it would easily get clogged in a smaller airbrush or if it did would it be easy to clean with hot water afterwards? It would be neat to make fine details on my chocolates. Has anyone had experience with this? My airbrush is a dual action eclipse model.
You can, but it has to be a special type of airbrush to do it. Many of the airbrushes in use let the lubricant from the compressor into the air line.
You thin the chocolate with cocoa butter and have to keep the chocolate at a constant temperature (87/88..) or it will set up.
If you have used the spray gun for other things (like paint), you'll need a new one.

Chefrubber also carries colored cocoa butter which is great for spraying into molds
I've seen some of the profesionals (at trade shows) do some really neat effects witht the colored cocoa butter, just make sure the spraygun stays warm.
Chocolate and cocoa butter have low melting points, so clean up is pretty easy with hot water, even if you forget and let the chocolate set up in the gun you can normally just heat up the spray gun with hot water to get it flowing again and then use more hot water to run through the spray gun to clean it out.
